Last fall our travel destination was the Pacific Northwest. The unexpected food trend up there that jumped out at me was the popularity of pot pie venues scattered around Seattle and Bellingham, Washington. Most appeared to be ma and pa small family operations.
After returning home, I saw an ad for Tip Top Savory Pies here in Boulder. This was founded by a New Zealand native, the nation that often gets credit for pot pies. One of its eleven varieties is called "Cauliflower tiki masala" and ingredients include chickpeas and onions in a creamy tomato sauce. Another of its pot pie choices is chock full of mushrooms. This venture has a kitchen which makes the pies and distributes them to various local eateries. It also offers a crustless pie.
I saw one of the pot pies in Seattle covered with a crumb topping. That appealed to me, since I adhere to a low-carb diet.
For those of you who have access to Trader Joe's, by-the-way, they offer a frozen set of two pot pies in both beef and chicken flavors that is to die for.
