Japanese Process of Drying Persimmons (Video)

I saw this story on Japan TV and thought it was fascinating, so thought I'd share it with readers here. Though drying persimmons in the mountains of Japan is a labor intensive process, some operations have streamlined it somewhat, for greater commercial production. Others dry the fruit on a very small scale on the windowsills of their houses. The dried fruits taste phenomenal as compared to the raw fruit just off the tree. Apparently, this work is done by older Japanese persons as you see in this beautiful film. The younger ages are not interested.
